Recipes
This is the first of many recipes that will be added as we discover them on our trip.
Caf's Love Curry
1 whole chicken jointed
1 tbsp ghee
1 onion finely chopped
2 cloves garlic crushed
1 inch ginger grated
6 whole green chillis
1 red/green pepper
1 onion quartered
1 pint water
1 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp mustard seeds
1 tsp fenugreek seeds
1 tsp fennel seeds
5 cloves
3 green cardamom
3 black cardamom
2 cinnamon sticks
2 star anise
1 tsp chilli powder
1 tbsp turmeric
2 bay leaves
1 pinch asfoetida
Fresh coriander
yoghurt
Salt and pepper
Preheat oven to 180'c
Heat the ghee over a moderate flame and add the onion, garlic and ginger and cook until soft but not coloured
Meanwhile toast the whole spices until aromatic and grind all but the star anise and cinnamon in a pestle and mortar to a fine powder
Add all the spices to the onion mixture and cook for 5 mins
Add water, chillis and chicken pieces and stir to coat, bring to boil, cover and place in oven for 90 mins along with pepper and onion
After time is up remove chicken and keep warm
Remove seeds and roughly chop pepper, remove skin from onion
Stir in yoghurt and coriander to sauce
Reduce sauce on hob if necessary
Add onion and pepper to sauce
Season to taste
Serve chicken covered in sauce and garnished with fresh coriander accompanied by steamed basmati rice and plain naan

The route we took in Iran caused us to come across a great deal of building works and the remains of a distinct lack of it. The war between Iran and Iraq had certainly left it's mark along the Persian Gulf, but the people we met seem to be moving on and taking advantage of the economic success the country is experiencing at present (in some cities by charging us rates we would have expected in a reasonable hotel in central London.)
Bit of a disappointment really, UNESCO had got their hands on it
